Baked Tortellini Soup

Ingredients

  • 1 1⁄2 lbs Italian Sausages
  • 1 cup chopped Onion
  • 1 teaspoon Garlic, minced
  • 1⁄4 teaspoon Ground Black Pepper
  • 4 cups Beef broth
  • 2 cups Water
  • 1 1⁄2 teaspoons Italian Seasoning
  • 1 1⁄2 cups peeled and thinly sliced Carrots
  • 1 (16 ounce) can whole Tomatoes
  • 1 (15 ounce) can Kidney Beans, drained and rinsed (can use butter beans)
  • 1 (6 ounce) canpitted sliced ripe Olives, drained
  • 2 cups diced Zucchini
  • 16 ounces tri-color Cheese tortellini, cooked al dente and drained
  • garnish with grated parmesan Cheese
  • serve with Garlic or regular French bread
